Julia Child is reported to have said, "I was 32 when I started cooking; up until then, I just ate." For me, I was 30. While I have always loved food, cooking was something I feared, disliked, and avoided until motherhood compelled me to overcome my feelings and, in spite of myself, I found I began to enjoy trying new recipes, creating tasty meals, and sharing them with others. These are the adventures of my learning to love something that overwhelmed and intimidated me for far too long. I hope you will enjoy (and perhaps benefit from) the tales of a reluctant cook!

Healthy recipes I want to try (originally posted February 18, 2014)
A friend posted a couple delicious sounding, healthy recipes on Facebook that I’d like to try at some point in the near future. Thought I’d pass them along for public consumption! Haha, get it? Consumption? Eating? ***cricket, cricket*** It’s been a long day.
Anyway, here you go:
PB, Oat, and Apple Afternoon Snack:
1/2 c cooked oats (1/4 uncooked), one small apple cut into chunks, 2 tsp natural peanut butter, topped with cinnamon and a packet of stevia. Mix and enjoy!
Coconut Flavored Chicken, Brussels Sprouts, and Sunflower Seeds:
Sautee 1.5 cups shredded Brussels sprouts (from Trader Joe’s) in 1 teaspoon of coconut oil. After about 4 minutes, toss in 1 cup of cooked, cubed chicken and 1/4 cup sunflower seeds. Serve with a side of green grapes. Enjoy!
