Julia Child is reported to have said, "I was 32 when I started cooking; up until then, I just ate." For me, I was 30. While I have always loved food, cooking was something I feared, disliked, and avoided until motherhood compelled me to overcome my feelings and, in spite of myself, I found I began to enjoy trying new recipes, creating tasty meals, and sharing them with others. These are the adventures of my learning to love something that overwhelmed and intimidated me for far too long. I hope you will enjoy (and perhaps benefit from) the tales of a reluctant cook!

Healthy Dessert: Baked Apple Slices (originally posted February 13, 2014)

I have to confess that I hate how much I feel compelled to think about baby weight these days. In part of my attempt to get back in shape, however, I resurrected one of my simplest, healthy dessert (or snack) recipes: Baked Apple Slices.


At just 60-80 calories (if using a medium sized apple), this dessert is healthy and remarkably satisfying. And it’s so simple, I hesitate to even call it a recipe. Regardless, it is worth sharing.image
Baked Apple Slices:

Serves 1

Ingredients:
1 Granny Smith Apple (I like the tartness of these apples, though you could use another kind, too)
Apple Pie Spices (I used pumpkin pie spices tonight since I didn’t have apple pie spices on hand- they worked just fine)

Directions:
Preheat oven to 350.
Wash apple and cut into slices.
Place slices on foil lined baking sheet.
Sprinkle with spices and bake for 15 minutes (you can adjust the time based on how crispy or how soft you want the slices).
Enjoy!

***Notes-
You could sprinkle a little bit of sugar on top of the slices if you really wanted, but I think the slices are delicious without (not to mention healthier).
