Julia Child is reported to have said, "I was 32 when I started cooking; up until then, I just ate." For me, I was 30. While I have always loved food, cooking was something I feared, disliked, and avoided until motherhood compelled me to overcome my feelings and, in spite of myself, I found I began to enjoy trying new recipes, creating tasty meals, and sharing them with others. These are the adventures of my learning to love something that overwhelmed and intimidated me for far too long. I hope you will enjoy (and perhaps benefit from) the tales of a reluctant cook!

Apricot Glazed Salmon (originally posted February 10, 2014)

I’ve been in a tired state for a few days now, so yesterday I ended up making another easy fish recipe. This is one our family eats regularly because it’s delicious and simple and quick to throw together. It also goes great with rice and a side of salad or other green vegetable (think asparagus, broccoli, brussels sprouts).

Apricot Glazed Salmon

Serves: 4

Ingredients:
·                1/4 cup apricot jam
·                2 teaspoons low-sodium soy sauce
·                Salt and pepper
·                4 (5-ounce) salmon fillets

Directions:
Turn the oven to broil and make sure the rack is not at the highest level; the lowest level is best, a good distance below the fire. Line a baking sheet with foil and set aside. In a small saucepan over low-medium heat, make the glaze by cooking the jam with the soy sauce until it begins to bubble and has noticeably thinned in texture, about three minutes.

Place the fillets on the foil-lined baking sheet and season them with salt and pepper.  Then use a pastry brush or a spoon to thinly coat the top of each fillet with the glaze.  Place in the broiler for about six minutes.  The top should be slightly browned, and the center of each fillet should be slightly translucent. 

Add a bit more of the glaze to the fillets and serve!
