Looking for a simple and delicious, healthy salad option? Try this yummy recipe. It’s perfect for lunch or as a side!
1 c spinach (smash so you can get a lot in the cup)
1 c mixed greens
2 hard boiled eggs, sliced
1/4 avocado, sliced
Dress with Dijon Vinaigrette Dressing, made as follows:
3 TB red wine vinegar
3 TB fresh lemon juice (you can use bottled)
3 TB Dijon mustard
2 cloves garlic, minced
1/4 tsp sea salt
1/4 tsp ground black pepper
6 TB olive oil
***Notes-
you could add some nuts, as well, if you feel so inclined and want some
extra crunch. I always like them as an addition to salad.
